Charred Garlic Scapes And Roasted Shallot Butter
Garlic scapes have a flavor all of their own. Their season is brief, so stock up while you can and preserve their flavor by making butter.
Ingredients
- ½ cup butter, softened
- 1 large shallot
- 3 tablespoons garlic scapes
- Extra virgin olive oil
- Salt and pepper to taste
- 1 tablespoon fresh lemon juice
Instructions
- Place butter in a medium mixing bowl and set aside.
- Roasted shallot: Mix peeled and quartered shallot with olive oil, salt, and pepper. Place on parchment-covered sheet pan in a 400°F oven for 20–35 minutes, until golden brown and softened. Let cool, chop, and add to butter mixing bowl.
- Charred garlic scapes: Toss scapes in olive oil, salt, and pepper, and grill over medium heat for 5–7 minutes, turning occasionally. (Garlic scapes can be roasted in the oven with the shallot.) Once cooled, finely chop, and add to mixing bowl.
- Stir in lemon juice and season with salt and pepper to taste. Once mixed, pack the butter into a ramekin or shape into a log using plastic wrap. Chill in the refrigerator for at least 30 minutes prior to serving.
